Los cereales constituyen la fuente principal de energía de la dieta en prácticamente todas las poblaciones del mundo. Tres de ellos, arroz, maíz y trigo, contribuyen con más del 90% de las calorías provenientes de cereales y representan poco más del 50% del promedio mundial de calorías dietéticas per cápita. Por ello no es sorprendente que los cereales tengan un impacto importante en la salud humana. Además de ser un componente casi universal de la dieta humana, los cereales son uno de los más antiguos, ya que fueron introducidos en el consumo habitual hace más de 10 mil años. Se considera que la domesticación y producción en escala de los cereales ha sido uno de los sostenes más importantes de la supervivencia de la especie humana.
